I originally planned to make pound cake tonight, but then quickly
realized that I didn’t have enough eggs left. But a quick flip through Moosewood
and I decided to make Apple Crisp. I had some left over apples from an orchard
trip I took, so it was clearly meant to be. This is a simple, basic recipe (I
had all the ingredients just hanging out in my pantry!) and even has two
variations, Strawberry-Rhubarb and Peach/Apricot-Cherry. Both of these are more
summer fruit recipes though, so they’ll have to wait for now. But Apple Crisp
is very autumnal, with walnuts, oatmeal, and cinnamon perfectly complementing
the tang of the Pink Lady apples.

Moosewood
requires the apples be peeled and sliced, which was actually not as frustrating
as I anticipated because it was good way to keep my hands busy as I watched my
new (not-so guilty) pleasure show, “Once Upon a Time”. Seriously, this show is
incredible and I’ve been marathoning it non-stop. I’ll probably be caught up by
the time the crisp is finished baking (not really).
I ate mine after it had cooled a bit, but Moosewood assures that any serving
temperature is delicious. It would also probably be incredible with some
vanilla ice cream, but I didn’t have any, unless I scooped it out of my tub of
Neapolitan, but I didn’t because effort. Although, to be honest, it probably
would’ve been good with Neapolitan.
The crisp was also my reward for
cleaning my disastrous apartment all afternoon. It’s been a really rough and
busy week (two exams, a project, and a paper) and I am so incredibly glad to
ring in the weekend with a relaxing night in, hours of lovely television, and
delicious baked treats to eat.
